Ingredients to prepare the cakes:
- 3 eggs
- 180 g all-purpose flour
- 175 g butter
- 170 g brown sugar
- 1 ½ tsp. teaspoon baking powder
- 3 tbsp. tablespoon of milk
- 1 ½ tsp. teaspoon vanilla extract
- 155 g white chocolate
For the ganache:
- 30 ml double cream
- 25 g dark chocolate
- 65 g milk chocolate
- 30 ml Baileys Irish cream
And for the icing:
- 110 ml double cream
- 165 g white chocolate
- 200g mascarpone
- 80 ml Baileys Irish cream
Preparing the Baileys cake
In order to prepare perfect cakes for your Baileys masterpiece, you must:
Preheat the oven to 170°C and, in the meantime, grease and line 3 molds (circular if you want to get the result in the photos). You can use just one, but it will take longer.
Next, in a bowl, beat together the butter and sugar. Then add the eggs and beat them well into the mixture until you get a light consistency. Meanwhile, add the three tablespoons of milk and the vanilla extract (measure to your heart’s content!), stirring constantly.
Melt the white chocolate and let it cool slightly before mixing it into the cake batter.
Divide the batter evenly between the 3 cake molds and bake for around 20 minutes until a beautiful golden color is obtained.
Once the cakes are cooked, let them rest in the molds for 4 to 5 minutes before turning them out onto a rack to cool.

The finishes also require a little attention. To prepare a perfect ganache, here is what to do:
Prepare the white chocolate ganache by heating the Baileys and cream until boiling and pouring over the white chocolate in a bowl and stirring. Then, for best results, let it cool for 20-25 minutes outside or, preferably, in the refrigerator. Proceed in the same way for the dark chocolate ganache!
To make the best frosting ever:
Once the white chocolate ganache has thickened slightly, incorporate the mascarpone using electric mixers. Beat for 10 to 15 seconds, scrape down the bowl, and repeat once or twice until you are happy with the result.
And to assemble the cake:
This is the funnest part of the whole process because it varies from person to person! It’s up to you to reveal your great hidden chef and tap into your hidden artistic talents! Here’s how to do it:
Place a layer of cake on a work surface and place half of the chocolate ganache in the center while spreading it.
Using a pipe (you can make one yourself with a clean plastic bag and scissors), spread some of the frosting around the edges of the cake. Next, spread a tablespoon of frosting over the next layer of cake and place it on top of the first layer. Repeat until there are no more cakes! You can double the recipe if you want to make a gigantic cake! Use the remaining frosting to cover the cake and add a generous amount of frosting on top. The decoration is to your liking! You can use fruits and even edible flowers or edible glitter to make it to your liking.
